Who’s up for a Sunday Skinny Surprise?! We are headed out on a *MAGICAL* adventure and I made our favorite Skinny Pimento Cheese for the trip!
It may be a little misleading to refer to any Pimento Cheese as “Skinny” but this is definitely a lightened up version.
Let me go ahead and apologize for the lack of mouth-watering pictures since I was concocting late last night and not sure I would actually share this post so quickly. But since we are on the slowest road trip of all time— – y’all can keep me company.
My dad once guesstimated he averaged around 1000 pounds of Pimento Cheese a year. (I’ll have to double check that fact with him- but I’m pretty sure it was 1000 per year.)
That’s a lot of Pimento Cheese- but his secretary, “Granny Ann”, is known for her Pimento Cheese. In fact, I never cared much for the stuff until I tried hers. And now I am a very snobby PC connoisseur.
This is NOT Granny Ann’s Pimento Cheese- but it is my second favorite… and I feel much less guilty eating it!
So here’s the deal- for Skinny Pimento Cheese you need a couple ingredients that you may or may not keep on hand: olive/avocado oil mayonnaise and non-fat plain Greek yogurt.
Both are staples in my house but most of my family would laugh in my face if I told them I made Pimento Cheese with anything but Helman’s mayo!
If you are a regular user of non-fat plain Greek yogurt you can just use it and skip the mayo altogether, but if this is a new ingredient for you I would suggest using equal parts mayo and Greek yogurt. I prefer the 3:1 ratio (ex: 3/4 c. Greek yogurt, 1/4 c. Mayo).
Another change I’ve made to my Skinny Pimento Cheese is mixing up the cheeses. Traditional Sharp Cheddar is THE ONLY ACCEPTABLE Cheese, but I use equal parts Sharp Cheddar, Mild Cheddar, and Monterey Jack.
1- I love Monterey Jack
2- The smell of Sharp Cheddar is rancid.
Finally I go heavy on the pimentos, toss in some deseeded, diced jalapeños, and dump a container of cracked black paper over the top (not really. but I do air on the side of cracked black pepper).
People- I promise! This Skinny Pimento Cheese is absolutely to die for! I believe it so much that we are opting out of eating *MAGICAL* food on our *MAGICAL* adventure and packing Skinny Pimento sandwiches instead! (This also saves our *MAGICAL* money- but more on that to come!)
And yes! I do eat Skinny Pimento Cheese with sweet peppers. It’s a fantastic, low carb option!
On top of a burger is another option. We have a local restaurant that serves a burger called the Red-Headed Stranger. I’m not much of a hamburger eater but that one is mouthwatering. So anytime we have hamburgers and Skinny Pimento Cheese I have to pair them (especially if there is a big, fresh tomato in between! And I know I’m weird- I prefer my burgers sans bun).
